- Rinse ½ cup dry quinoa
Steps:
Oven at 425°F. Place seasoned chicken breast on a sheet pan coated lightly with cooking spray. Bake 22–26 minutes.
> Doneness cue: Internal temp 165°F at the thickest point. Juices run clear when pierced. The exterior will be lightly golden.
> Warning: Chicken breast has no fat to protect it from overcooking. Do not guess — use a thermometer. 170°F and it's already turning chalky.
While chicken bakes: Combine rinsed quinoa with 1 cup water in a saucepan. Bring to boil over high heat, reduce to low, cover, cook 15 minutes. Remove from heat, rest covered 5 minutes, fluff with a fork.
> Doneness cue: All water absorbed. White spiral tails visible on each grain.
At the 15-minute mark on the chicken: Heat a large skillet over medium-high heat. Add 1 tbsp olive oil. When oil shimmers (about 30–45 seconds), add zucchini slices in a single layer. Let sit undisturbed for 2 minutes to develop color.
> Doneness cue: Cut sides are golden-brown, not gray. Zucchini yields when pressed with a spatula but isn't soft through.
> Warning: Zucchini releases significant water when cooked. If you crowd the pan, that water can't evaporate and you get steamed, soggy zucchini instead of sautéed. Use your largest skillet or cook in two batches.

Steps:
Make the protein yogurt bowl first: Add whey protein powder to Greek yogurt in a bowl. Stir vigorously for 60 seconds until no dry streaks or clumps remain. Add powder in two batches if it clumps.
> Warning: Don't stir the powder on top without incorporating it — you'll end up with a dry chalky center and liquid yogurt around it.
Top the protein yogurt with blueberries. Set the bowl aside.
Heat a non-stick skillet over medium-low heat. Lightly coat with cooking spray or a very small amount of butter (less than ¼ tsp — this is about flavor, not fat).
Pour beaten eggs into the pan. Let sit untouched 30 seconds until the edges just begin to set. Then fold gently from the edges toward the center with a spatula, every 30 seconds.
